Water sustains all forms of life, including human life. Water is one of the most mysterious substances on this planet. Scientists are still discovering amazing facts about water. More than 70% of our body weight is water. That translates into about 10 gallons of water for a 120lb. person. You are a bundle of water wrapped in skin and walking around. Understanding water and drinking the right kind of water will give us health and longevity. Properties of Water Water is a strong solvent: therefore, it carries many invisible ingredients, such as minerals, oxygen, nutrients, waste products, and pollutants. Inside the human body, blood (which is 90% water) circulates throughout the body distributing nutrients and oxygen, and collecting waste and carbon dioxides. Every substance deep inside the body was brought there by the blood and can be brought out by the blood. Unlike any other substance, water is lighter in its solid state in its liquid state. That why ice floats in water. Otherwise, lakes and ponds would freeze from bottom up in the winter time, killing all living things in them. Water not only sustains life but also protects life. Structure of Water We all know that a water molecule is H20. That means each molecule contains two hydrogen atoms and one oxygen atom. These two hydrogen atoms are not attached to the oxygen atom in 180 deg. angle but a 104.5 deg. angle in liquid state and a 109.5 deg. angle in ice, making ice a more open structure than liquid water and giving it a lower density. These angles create electric polarization effects on water molecules. The side with hydrogen is more positive than the side with oxygen. For this reason, water molecules are not disjointed, but instead they form structures that change from hexagonal to pentagonal and back, contantly, in a very short of time (10¯¹¹ second) in a cooperative manner. Electrolyzed oxidizing water is a relatively new concept that has been utilized in agriculture, livestock management, medical sterilization, and food sanitation. Electrolyzed oxidizing (EO) water generated by passing sodium chloride solution through an EO water generator was used to treat alfalfa seeds and sprouts inoculated with a five-strain cocktail of nalidixic acid resistant Escherichia coli O157:H7. EO water had a pH of 2.6, an oxidation-reduction potential of 1150 mV and about 50 ppm free chlorine. The percentage reduction in bacterial load was determined for reaction times of 2, 4, 8, 16, 32, and 64 min. Mechanical agitation was done while treating the seeds at different time intervals to increase the effectiveness of the treatment. Since E. coli O157:H7 was released due to soaking during treatment, the initial counts on seeds and sprouts were determined by soaking the contaminated seeds/sprouts in 0.1% peptone water for a period equivalent to treatment time. The samples were then pummeled in 0.1% peptone water and spread plated on tryptic soy agar with 5 microg/ml of nalidixic acid (TSAN). Results showed that there were reductions between 38.2% and 97.1% (0.22-1.56 log(10) CFU/g) in the bacterial load of treated seeds. The reductions for sprouts were between 91.1% and 99.8% (1.05-2.72 log(10) CFU/g). An increase in treatment time increased the percentage reduction of E. coli O157:H7. However, germination of the treated seeds reduced from 92% to 49% as amperage to make EO water and soaking time increased. EO water did not cause any visible damage to the sprouts. The term, pH refers to the potential of hydrogen which is a measure of the hydrogen ion (H+) concentration and also a measure of acidity or alkalinity. The pH scale ranges from 0 on the acidic side to 14 on the alkaline side. A solution is neutral if the pH is 7. The pH scale is logarithmic, so a change of one pH unit indicates a tenfold shift in the concentration of hydrogen ions. For example: a pH of 6 is ten times more acidic than a pH of 7, and it is 100 times more acidic than a pH of 8. You can see how a slight shift in pH can be quite significant. In the human body, pH is critical especially in your blood. The pH range that is considered to be normal for blood is between 7.30 and 7.45. Blood pH is a direct indicator of how much oxygen is available for your cells. Blood at a pH of 7.45 contains 65% more excess oxygen than blood at a pH of 7.3.4 Lack of oxygen and the resulting metabolic acidosis is a component of just about every disease we know. Nobel prize-winning research in the 1930s and 1940s by Dr. Otto Warburg revealed that cancer could not live in an oxygen-rich environment. His research provided evidence that oxygen-starved cells switch to another mechanism for producing energy one that does not require oxygen and one that is capable of surviving in an acidic environment.5 Since his original research, most disease has been linked with the lack of oxygen and the build-up of acidic wastes. Blood with a pH of 7.3 is also thicker than blood with a more alkaline pH. Acid is partially responsible for blood clotting. A lower blood pH means thicker blood that is more difficult to pump.
